Last night was the first night of Passover (and yeah, I eat rice over Passover, so sue me ^_^) and my mother sent me home with a ton of leftovers. ^_^ So, I thought I'd change it up a little today. Leftovers are our friends! I had the broccoli and onigiri (made two days ago) in my own fridge, the rest is all from dinner last night! ^_^ And I even managed to keep it close to the 1:1:1 ratio (carb : veggie/fruit : protein)! Tomorrow I'm going to do something with the sweet potatoes... ^_^

Salmon Onigiri with Raw Broccoli

Onigiri made with 1 cup rice and 1/3 package of smoked salmon --> 240 calories total
Raw broccoli --> ~15 calories (also bringing some no-cal dressing for it -- me, cheat? No... *eg*)
Dark Meat Turkey, Cooked Asparagus and Cranberry Sauce
Dark Meat Turkey, Cooked Asparagus and Cranberry Sauce
1/2 cup dark meat turkey --> 131 calories ((I know the white meat is healthier, but I just can't stay away! O_O
1/4 cup cranberry sauce --> ~100 calories ((Varies a little, but they're all roughly the same and I don't know which my mom had... *sheepish grin*))
1/2 cup cooked asparagus --> 20 calories ((Thought I'd change it up a little from the spinach. And it makes such a good container divider, doesn't it? ^_^))

*nodnod* I think the extent to which we try to limit what foods we eat is ridiculous. I mean... soda? Because of the corn syrup? *twitch* I've never in my life seen soda "rise". And ketchup? I never figured that one out, either. :-P So, generally, my mom and I just agree to disagree. ^_^
